Taco Party with Gosh! Sweetcorn & Quinoa Bites

Ingredients
- Gosh! Sweetcorn & Quinoa Bites
- 2 avocados
- Salad Leaves
- 8 cherry tomatoes, chopped
- 1 lime
- 1 red onion, sliced finely
- 1 fresh chilli, chopped
- 4 spring onions, finely sliced
- A handful of fresh coriander, chopped
For the BBQ Sauce
- 200g tin of chopped tomatoes
- 2 tbsp tomato purée
- 1 tbsp molasses sugar or maple syrup
- 4 tbsp brown sugar
- 1 tbsp raw apple cider vinegar
- 2 tsp chilli powder
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp mustard
- A pinch of sea salt
Method
- Preheat the oven to 180°C/350°F/Gas 5. Cook the Gosh! Sweetcorn & Quinoa Bites for 15 minutes. Meanwhile, make the BBQ sauce by whisking all the ingredients together.
- To assemble the tacos, layer each shell with salad leaves, sliced avocado and chopped tomatoes. Load the Gosh! Bites on top and generously drizzle with the BBQ sauce. Finish with the coriander, chilli, spring onion and a squeeze of lime.
